Boil the water, add salt, remove from the heat and pour over the couscous with a spoonful of oil and salt. Leave to rest for about 5 minutes and separate the grains with a fork.
Blend the fresh herbs in the mixer together with 2 spoonfuls of extra virgin olive oil, the walnuts and the garlic. Add salt and pepper. Pour into a bowl together with the couscous and mix.
Decorate with the sliced almonds previously toasted in a non-stick pan.
